iReport — My signature dish is summer squash and goat cheese custard, a super simple but delicious summer dish. It’s my signature because, well, I make it a lot and we tend to grow the squash in the backyard. Here's the recipe: Ingredientsa. Summer squash (3-4)b. Goat cheese (4 oz)c. Butter (3 tbs)d. Cornmeal (1/4 cup)e. Eggs (2)f. Milk (1 cup)g. Fresh herbsh. Sugar (1 tbs)i. Coarse salt (2 tsp)j. Freshly ground black pepper (1/2 tsp) StepsStep 1: Chop, baby, chop. Get the squash into 1/4 inch rounds.Step 2: Cook squash in water, about 15 minutes, or until it smushes with a fork.Step 3: Strain and mash the squash.Step 4: Add the goat cheese and butter, then everything else.Step 5: Pour the mix into ramekins and bake until golden brown on top, about 40 minutes at 400F.Step 6: Ring the dinner bell and enjoy.
